Cupcakes from Vegan Cupcakes Take Over The World
A friend of ours got engaged and asked me to make some cupcakes for their engagement party. I happily said “Yes.” Since the party was at a Mexican restaurant we decided the cupcakes should follow the theme of the restaurants cuisine. I made the Mexican Hot Chocolate Cupcakes and the Simple Vanilla and Agave Nectar Cupcakes. They were all decorated, by our engaged friend, Anna and my sister Nicole with a vegan Vanilla Buttercream. They were a hit and no one knew that they were vegan except a few of us who were privy to that sorta information. I even got double thumbs up from the bride to be’s Maa!!!
The great thing about making these 2 cupcakes are that know have a go to recipe when I need a vanilla cupcake. I loved the agave in it so much. It made it a bit different from a regular vanilla cupcake but I think also better. Also the Mexican Hot Chocolate Cupcake has made the top 5 of my favorite cupcakes of all time. I even made mini ones the same day I made the engagement party ones for a vegan event I was going too. So basically…if you haven’t made these 2 cupcakes yet I suggest you do ASAP!
Speaking of vegan events. Over the past 2 days myself, 2 other Jennifer’s and a Rachel have decided to take part in the Worldwide Vegan Bake Sale! We will have a table set up in Montclair NJ on May 1st right outside of Go Lightly. Once I have all the information available I’ll post all the info here.
