Seitan and Vegetable Stir Fry w. Cashews
Better than any Chinese restaurant meal I’ve ever had. Uses my Basic Seitan Recipe. For the sauce I just mix some tamari with arrowroot powder to make it nice and thick.
Shells and Cheese
I wing my “mac and cheese” recipe all the time. Non-dairy milk, flour, nooch, garlic powder and some other stuff. This is the best it’s ever come out. I used unsweetened Coconut Milk (the kind you buy to drink not the canned). I love having what I call drinking coconut milk. Its so creamy and delicious. Wonderful product for some Shells and Cheese.
TLT w. Avocado
On Monday I posted about Coconut Bacon BLT’s. Whenever I have Tempeh Bacon, leftover from breakfast, I make myself a TLT and it must have avocado on it.
A Miles Lunch
My youngest is an eater. There isn’t much he won’t eat. On this particular day we had some cut up Chickpea Cutlets from Veganomicon, carrot sticks and slices of cucumber.
