Spinach-Cashew Ricotta Baked Ziti

Hello everyone! I’m excited to announce that I am now a contributor over at ChicVegan.com. I’ll be posting a new recipe each month and doing some extra review and such from time to time over there. It’s a great site full of wonderful vegan writers. Check it out if you haven’t yet.

My first recipe is up and it’s for a Spinach-Cashew Ricotta Baked Ziti. I truthfully don’t really care for baked ziti’s but it was cold out and I wanted something comforting. I think my problem with traditional baked ziti was the real cow’s milk ricotta and cheese. I like this one with the cashew ricotta much better then that other stuff. It was also a hit with my kids. Reno wouldn’t try it at first and we she finally did she had 2 servings and has been asking for me to make it ever since.
