Chocolate Covered Pretzels

I’m a chocoholic. I drink it in my coffee every morning and I eat some form of chocolate every day. Its quite possible you’ll see chocolate pop up again in my final post tonight in this one day series. 

Lunch: hummus wrap w. tomatoes, olives and romaine

Hummus Wrap

We had lunch al fresco today on our back deck. A PB & J for my 3 years old and a Hummus Wrap w. Tomatoes, Kalamata Olives and Romaine for me. I love all the different colors in this meal! I rolled it up into a nice tight little wrap when I got outside. It was perfect.

For an after lunch snack I had some Salt and Pepper Pistachio Nuts. They are so addictive and it’s hard to stop eating them! After I finished the handful above I had at least another half of a handful. 

Not Pictured: A second Iced Almond Milk Mocha. I only had a small about of cold french pressed coffee left over so I though why not. Now I just need to drink a lot of water for the rest of the day!

I’m trying something different today. I’ve never done a What I Ate Wednesday Post but instead of doing it all in one shot I’m going to update 2-3 times through out today with what I ate. Its kinda like real-time blogging in a way.

I ALWAYS start my day with an Iced Mocha. ALWAYS! I make my own chocolate sauce and I keep already French Pressed coffee in my fridge. I’ll occasionally go to Starbucks but I find what I make for myself at home is so much better, and more affordable! The coffee I use is Fair Trade, Organic beans from a company in upstate NY called Catskill Mountain Coffee. Zanzibar bean. Its the best coffee. Plus organic and fair trade is awesome. 

To froth the milk I bought a small battery powered, cheap frother from IKEA. I’m on my second one already since I use it everyday. 

Breakfast: seitan bacon tofu scramble



This is not my normal breakfast. The toast with EB would be normal. Last night I used only half a block of tofu for dinner and usually the other half would go to waste. I’m trying my hardest to use up all of the food I buy so I made a quick Tofu Scramble with some Upton’s Seitan Bacon and string beans thrown in along with onions, garlic and spices. It was fabulous and it gave me an idea for another Tofu Scramble to make on another day. I happily have leftovers of this breakfast for tomorrow.

Recent Eats and Treats

Vietnamese Spring Rolls

I’ve been splurging a bit while food shopping lately. I’m working 3 day’s a week at a new local vegan restaurant my friends opened called Mundo Vegan and it’s giving me a few extra bucks to spend on things I normally wouldn’t while still putting some money into our savings. Its fun!

I tend to steer clear of the Whole Foods prepared food section, because of the priciness of it, but I glanced at it the other day and these Vietnamese Spring Rolls pulled me over. Rice paper wraps are one of my favorite things to eat! Filled with rice noodles and fresh herbs. These were so fresh and delicious and it came with a great peanut sauce to dip. I was hooked but unfortunately I went back a week later for some more and they didn’t have any. I’ll just have to make my own.

Brads Raw Chips: Cheddar

Another splurge! I usually just splurge on special chocolate bars. Brads had a sampling at Fairway a few months ago and I fell in love these Cheddar chips. Buying a whole bag of them didn’t disappoint. I love the zing of flavor you get while eating them. I’ll definitely treat myself to these again sometime down the road.

Vegan Bake Sale at @mundovegannj today

Worldwide Vegan Bake Sale

It goes without saying that I purchased quite a few vegan baked treats at our local Worldwide Vegan Bake Sale. There was a container of treats that we took home and a whole bunch of them that didn’t even make it home like The Cinnamon Snail donated donuts. The 4 of us each had 1. My daughter might have eaten 2 of them.

Dinner: fried seitan salad with agave mustard dressing. Carrots, red pepper, tomatoes, slivered almonds. #vegan

A healthier way to eat breaded and fried seitan. No? Preparing seitan this way has become a staple in out home. Its something that the kids will eat. Especially my son who has become super picky lately. My husband and I had a big salad with mesclun, tomatoes, carrots, red pepper and almonds with a few pieces of the seitan thrown on top. I topped mine with a home made Agave Mustard Dressing. My husband choose a balsamic dressing and just dipped his seitan in the Agave Mustard. Eating the seitan as a salad might be my new favorite thing and I’ll definitely be making it again very soon.

These were a hit at my sisters birthday party! Roasted zucchini, red peppers and red onions with a spinach basil pesto. I see this being a summer staple.

I could eat this everyday. Its a good thing for my health that it’s a once in awhile treat.

Simit for breakfast


Have you tried a Simit yet? There is a place down the street from the restaurant I work in called The Simit House and their Simit’s are delicious. I love that they are “the bagels grandfather”. We all know how much I love bagels!

Grateful for leftovers!

There are some days when I’m packing lunch that I’m thankful for leftovers. Whether they come from my kitchen or someone else’s. Ideally I would do my weeks worth of food shopping on Sunday. Our weekends are so busy that that doesn’t usually happen so Mondays lunches are a bit interesting. Thankfully my Mother-in-law sent home some Rice and Beans Sunday night and I had 1 extra Mini Pesto and Vegan Cheese Pizza left from a few lunches before. The beans made up the main part of the meal. I gave her 1/2 of the mini pizza and saved the other 1/2 for her brother. We rounded out the meal with the never ending supply of grapes that it seems we have for these past 2 weeks and some crackers. She always has a reusable bottle of water and for the past 2 days I’ve been packing a mini apple juice box. She has been complaining about not having enough to drink. Last year she would come home with an almost full bottle of water so at least we are improving on her rehydrating habits at school.

So far every lunch I’ve sent to school has come home completely finished! I’m really excited about that and I’m sure I just jinxed it!
