Raspberry Blackout Cake

I celebrated my 30-something birthday at the beginning of the month. I made my own birthday cake, the  Raspberry Blackout Cake from Vegan With A Vengeance, although it wasn’t as pretty as the time I made it for my sisters birthday. Its my go to cake for family birthdays. I don’t know a single person who doesn’t like that cake. It’s easy to make and raspberry and chocolate go perfectly together. My daughter has already requested it for her birthday at the end of August. She also requested the Double Dare Peanut Butter Cake from Nut Butter Universe. In another week I’m sure a 3rd cake will be requested!


Pad See Ew

We ordered some Thai takeout. Even though they added chicken to my Pad See Ew TWICE it was delicious when I finally got my correct order! Besides the Pad See Ew I also ordered my favorite Curry Puffs which are filled with potato-y goodness.

Now for the birthday gifts!

My husband gave me a machete for my b-day. #forreals I opened this coconut with it.

My husband bought me a machete! To open the coconuts the kids are alway’s having me buy. It was so much easier to open with the machete.

The Killers in Newark NJ last night. #mybirthdaypresent #thekillers #thekillersconcert

My Maa got me tickets to see The Killers a few days after my birthday! It was our second time seeing them this year. I love them and they put on an amazing show.

Not pictured is a new camera! For a year now almost all of my pictures have been taken with my iphone. My trusty point and shoot that took great photo’s crapped out on me after a few years of heavy use. I’m currently researching camera options. I can’t wait to have “real” photos on this site again instead of just pushing them all through instagram. I’m thinking of another point and shoot but a more souped up one. A DSLR would be ideal but in reality I wouldn’t carry it around with me. I think I’ll wait a few more years before going down that route plus I have one I can borrow from family.

Raspberry Blackout Cake w. Ganache-Y Frosting

If you happen to be celebrating a birthday in our family this is most likely the cake I would make for you*.  Who doesn’t like chocolate and raspberry together? Crazy people I suppose. I’ll admit that I usually don’t like raspberries at all but when mixed with chocolate cake you can’t go wrong.  My sister was the lucky recipient of this cake even though a day before her party she requested a Crepe Cake which wasn’t going to happen on such short notice with 2 kids in the house. The recipe is from Vegan with a Vengeance. You really can’t go wrong with any of Isa’s recipes.


When I was done smoothing out the frosting I had a bit left over and added some star details with a piping bag and tip. The detail and some fresh raspberries, which I picked off (!), made for a beautiful birthday cake!

*On occasion I’ve been known to make a coconut cake for birthdays also.

Old Favorite

Spaghetti Alfreda with Sauteed Seitan

This is an old favorite of mine. The Alfreda Sauce recipe from Vegan with a Vengeance. I haven’t made it in a while, until recently, because Peter once told me he didn’t care for it that much.  So after about 2 years (!what!) without having it I went against his taste buds and made it again and was so happy that I did. This is total comfort food for me and it has some of my favorite ingredients in it:  pine nuts and nooch (nutritional yeast for those who don’t know it by nooch). I love the thickness and the taste of this stuff. If you have never had this and want to try it just keep in mind that it resembles nothing of a real Alfredo sauce. It’s it’s own delicious beast.
