Somehow my youngest just turned 3 years old the the other day. Everything about his birthday had to involve dinosaurs. From the decorations, the presents, his clothes and even his cake. He is ridiculously and adorably obsessed. He really wanted his party to take place at the local Dinosaur Park, yes there really is one, but we will do that trip on a later date. His party took place on our deck for about 10 minutes and then due to torrential rain we moved it into our basement.
He went back and forth on what type of cake he wanted. First it was just vanilla. Then chocolate. Then both and at last a dinosaur cake. I went with “both and dinosaur cake. I made a basic 2 layer chocolate cake using a recipe from the cookbook: Have Your Cake and Vegan Too by Kris Holechek from the nomnomnom blog. The frosting I threw together myself. Just the usual Earth Balance, powdered sugar, vanilla..etc..frosting. After frosting the cake I plopped on his favorite dinosaur and made a quick banner to make it a touch more festive.
The cake itself was amazing. So moist and incredibly delicious. I took a risk by making a recipe I never made before and it paid off. A week later some non vegan guests were still raving about this cake! This is my new go to chocolate cake recipe and it should be yours as well.
Most importantly the birthday boy was so happy with it. There was a dinosaur on it! So thrilling to a 3 year old! My birthday is coming up next and I will be making my own cake. This one! Maybe with a dinosaur on it.
Raspberry Blackout Cake
I celebrated my 30-something birthday at the beginning of the month. I made my own birthday cake, the Raspberry Blackout Cake from Vegan With A Vengeance, although it wasn’t as pretty as the time I made it for my sisters birthday. Its my go to cake for family birthdays. I don’t know a single person who doesn’t like that cake. It’s easy to make and raspberry and chocolate go perfectly together. My daughter has already requested it for her birthday at the end of August. She also requested the Double Dare Peanut Butter Cake from Nut Butter Universe. In another week I’m sure a 3rd cake will be requested!
Pad See Ew
We ordered some Thai takeout. Even though they added chicken to my Pad See Ew TWICE it was delicious when I finally got my correct order! Besides the Pad See Ew I also ordered my favorite Curry Puffs which are filled with potato-y goodness.
Now for the birthday gifts!
My husband bought me a machete! To open the coconuts the kids are alway’s having me buy. It was so much easier to open with the machete.
My Maa got me tickets to see The Killers a few days after my birthday! It was our second time seeing them this year. I love them and they put on an amazing show.
Not pictured is a new camera! For a year now almost all of my pictures have been taken with my iphone. My trusty point and shoot that took great photo’s crapped out on me after a few years of heavy use. I’m currently researching camera options. I can’t wait to have “real” photos on this site again instead of just pushing them all through instagram. I’m thinking of another point and shoot but a more souped up one. A DSLR would be ideal but in reality I wouldn’t carry it around with me. I think I’ll wait a few more years before going down that route plus I have one I can borrow from family.
We have had lots of celebrating going on lately. Miles birthday, Reno’s summertime birthday celebration at school, Fathers Day..BBQ’s..etc…I’ve been baking a lot of desserts for all these events. First up was my son’s 2nd birthday. We packed our backyard with family and friends. I was originally going to make cupcakes and then quickly realized I’d have to make 4 dozen of them. Then realized that most of the time the kids just lick off the frosting and leave the cupcake behind. I didn’t want that experience! I decided to make a double batch of my Double Chocolate Brownies and then got the idea to make a Brownie Ice Cream Sundae bar. My sister was kind enough to stop at the store and pick us up some vegan ice creams. It was hugely popular and I’ve decided to do this for all hot weather parties. Since this was a last minute idea all there was were my brownies, ice cream and berries. Next time I’ll have other toppings and whipped cream available.
Vanilla Vanilla Cupcakes
For my daughters summertime birthday celebration at school I made 2 dozen Vanilla Cupcakes with Vanilla Buttercream from Vegan Cupcakes Take Over The World. I love this recipe and it alway’s goes over well with kids and parents because the cake isn’t too sickening sweet. I piped the buttercream on top after it was in the carry case to make less of a mess and was lucky to find some hot pink sprinkles in the spice cabinet. According to my daughter a few of her friends wanted seconds, some kids didn’t want them at all and I’m sure some just licked the frosting. C’est la vie.
For the record..my daughter ate 3 of them.
Double Dare Peanut Butter Cake
Peter’s cousin was kind enough to invite the whole family over for a BBQ last weekend. She saw the peanut butter cake I made from Robin Robertson’s Nut Butter Universe book and asked if I would make it for her party. I jumped at the chance to make it again. Its so easy and everyone loved it the first time I made it. The pic above is the same as in the review post. I was so embarrassed with how the second cake looked! The piping bag dropped on the cake and the piped border started melting…it was hot mess but it was still delicious. His whole family really enjoyed it though and they thought it looked nice. I’m sure I’ll be making this cake again soon.
Father’s Day BBQ
Our last celebration was Father’s Day and I again made my brownies. Instead of talking about them I’ll show you our feast. My sister made some of the best grilled vegetables I’ve ever had. She didn’t do anything special with them at all and they were amazing! My mom was kind enough to set aside some macaroni salad and potato salad before she put mayo on them. I was then able to add some vegan mayo and enjoy the salads along with everyone else. (she even put the macaroni salad aside before she added peas to it! she knows me well!) My mom’s famous doctored baked beans were served also. You can find a recipe for the baked beans right here on the site.
We have many other events and holidays to celebrate over the summer months..I’ll be very busy baking for them!
Raspberry Blackout Cake w. Ganache-Y Frosting
If you happen to be celebrating a birthday in our family this is most likely the cake I would make for you*. Who doesn’t like chocolate and raspberry together? Crazy people I suppose. I’ll admit that I usually don’t like raspberries at all but when mixed with chocolate cake you can’t go wrong. My sister was the lucky recipient of this cake even though a day before her party she requested a Crepe Cake which wasn’t going to happen on such short notice with 2 kids in the house. The recipe is from Vegan with a Vengeance. You really can’t go wrong with any of Isa’s recipes.
When I was done smoothing out the frosting I had a bit left over and added some star details with a piping bag and tip. The detail and some fresh raspberries, which I picked off (!), made for a beautiful birthday cake!
*On occasion I’ve been known to make a coconut cake for birthdays also.
